Double Ska Jamaican Chicken burgers with pineapple salsa

While looking for ideas for recipes to try, I chanced upon one for Reggae Reggae burgers. The Reggae Reggae brand originated on Dragon's Den in the UK when Levi Roots strummed a guitar in his pitch and got some rich fucker to buy his sauce (ooer, sounds a bit rude). The brand is now a corporate behemoth incorporating not just the original sauce, but various other table sauces, spice mixes and other products up to and including pasties and even soft drinks. I'm sure Levi Roots did start off with family recipes, but sold out faster than a Tory MP with a... Actually, no need to qualify that, he sold out faster than a Tory MP because that's what they fucking do. Then again, Dragon's Den is, by its very nature, all about selling out, so good on him.

He used the unique selling point, or USP, of his Jamaican culinary heritage and home-cooked, family recipes to create his brand. It's not as if he's an American who's voice is the auditory equivalent of having your head pushed into a bucket of wallpaper paste, nor is he some wanky, angry TV chef who's face is plastered across a range ready-made sauces which they wouldn't actually touch with a barge-pole topped with a Michelin star. Of course, not all USPs are created equal. Take mine for example. I'd probably go on Dragon's Den, force-feed the dragons a bowlful of chilli that would have them shitting napalm for the next week and I'd probably end up going home empty handed having subsequently called them a bunch of twats.

I've done a recipe for burgers previously, of the beef variety, which is the origin of the hamburger. You can get chicken burgers at your local corporate fastfood joint, but they do tend to be breadcrumbed and deep-fried so, in my humble but profane fucking opinion, aren't actually "burgers". Burgers, for me, should be made of minced or ground meat. Flavour them how you like, but they need to be, for all intents and purposes, a reconstituted steak 

So, I wanted to do something that had a Caribbean feel, I love burgers (as I've made clear before) and thought chicken burgers just don't get enough coverage. Now, chicken is basically pretty bland on its own so you need to give it lots of flavour. A bit of ginger, lime juice and chilli add just enough tropical character to justify me ripping off Levi Roots' Reggae Reggae brand to call mine Double Ska. And because of that, why not have a bit of ska before we start (like you need a reason to play a great bit of Prince Buster)?

TIMING
Preparation: 60 minutes (including roasting the pepper and leaving it to cool)
Cooking time: 15 minutes

INGREDIENTS
Pineapple salsa
1 small yellow pepper
Half a small, fresh pineapple, cored, peeled and the flesh diced
3 or 4 spring onions, trimmed, cleaned and finely sliced
Juice of  ½ a lime
1 tbsp rum
½ tsp ground allspice

Burgers
Half a medium red onion, finely chopped
1 medium to large garlic clove, crushed
1 tbsp vegetable oil
500g skinless chicken thighs, boned (or bought boneless)
half a thumb's size of fresh root ginger, finely chopped
Juice of ½ a lime
Pinch of dried thyme
1 chilli, deseeded and finely chopped
1 egg
Salt and freshly ground black pepper

To serve
Basic green salad or a few washed lettuce leaves, shredded.
Bread buns

RECIPE
For the salsa
Wash the pepper and place in an oven at 200°C for 30 minutes.

Remove from the oven and place in a plastic bag and seal until cool.

Remove the pepper and peel off the skin.

Core and dice the pepper.

Mix the chopped pepper with the pineapple and spring onion in a bowl.

Add the allspice, rum, and lime juice.

Mix well and chill until you need it.

For the burgers
Heat the oil in a pan and gently sauté the onion and garlic for 5-10 minutes, until the onion is soft and near-transparent.

Add the ginger and carry on gently frying for another 5 minutes.

Allow to cool.

Trim any stringy, white bits from the chicken and cut it into smallish chunks.

Throw the chicken, the cooled onion, garlic and ginger, plus the other ingredients into a food processor and blend for a minute or so, occasionally stopping to scrape any larger pieces of the mixture back into the bowl.

Form the chicken mix into patties. This amount of mixture will make around 4 and (as I stated in my post for hamburgers earlier) I use a burger press to make evenly sized patties, but I'm one of those people.

Cook in a little oil in a frying pan of griddle pan. They take around 5-7 minutes per side. Ensure they are cooked through.

Serve in a toasted bun with salad and a dollop of the salsa and a side order of chips/wedges (sweet potato wedges work especially well).

The burgers can be quite soft and break up easily so it's worth putting them between sheets of clingfilm or grease-proof paper and leaving them in the fridge for an hour or more to help them keep their shape when cooking.

I de-seeded the chilli in the burgers because you want the burgers to have only a mild kick. On the other hand, you could completely leave the chilli out if you're effetely inclined.

I didn't put chilli in the salsa, but you could if you wanted a bit more heat. I appreciate that this salsa is similar to the pineapple sambal I posted previously, but the flavours are very different in character and really encapsulate the respective cuisines they come from.

Like in a lot of Caribbean food, the best chillies to use are Scotch bonnets which have a fantastic and distinctive fruity flavour.

Butternut squash and ginger soup

Soup is fucking great. Take any old crap you've got left over in the fridge or larder, chuck it in a pan with some water, blend it up, and there's lunch for the best part of the working week. This wasn't always the case in my life. When I grew up, making soup meant opening a tin. Not that there's anything wrong with tinned soup, generations have been raised on it. It's weening food that graduates to essentially baby food for adults. One day you're suckling at your Mum's breast, the next it's Baxter's Scotch broth complete with lumps of vegetables and no nipple (though it has lamb in it, so I suppose it may have teat, which is almost the same).

Soup is the ultimate in comfort food, so much so that Heinz use this idea to promote their tinned product when the clocks go back every autumn and even Cup-A-Soup promoted themselves as "a hug in a mug" (no it's not a hug in a cup, you marketing twat, it's a sachet of dried of fucking soup). Then there is the legendary recuperative powers of chicken soup. You have the Jewish idea of Mama's chicken soup as a cure all or even bah kut teh, a pork soup from Singapore laced with pick-me-up herbs from traditional Chinese medicine. Now, I know I've nailed my particular colours to that particular mast with a rant on TCM in this blog entry, but if it makes you feel better, especially as a hangover cure, it's not a bad thing. After all, we're not talking about claiming it can cure cancer.

Anyway, as good as tinned soup is, homemade soup is in a different league. You know what's in it, you can put as much or as little salt in it as you like and tweak the flavour any way you want. Best of all it just tastes so much more fucking fresh.

Butternut squash, as I've waxed lyrically about previously, lends itself to lots of dishes, working especially well with the spices of curry. Pairing it with ginger seemed an ideal combination and, as I found out, it was spot on.

INGREDIENTS
1 tbsp olive oil
½ red onion, chopped
½ bulb of garlic, cloves peeled and crushed
A large chunk ginger (about the size of 1-2 thumbs), finely chopped
1 stick celery, chopped
2 medium-sized potatoes, peeled and diced
Half a butternut squash, peeled, seeded and cut into 2 cm cubes
2 chillies, finely chopped
½ tin tomatoes
½ bunch spring onions, chopped
1 litre water
1 vegetable stock cube, crumbled
1 tbsp tomato puree
1 tbsp light soy sauce
Juice of half a lemon
Freshly ground black pepper

RECIPE
Heat the oil in a big, heavy pan and gently fry the red onion, garlic, ginger and celery for 10 minutes.

Add the potatoes and carry on sauteing for another 5 minutes.

Add the squash, chillies, and spring onions for a couple of minutes.

Pour in the water, tomato puree, soy and lemon juice.

Season well with black pepper and bring to the boil.


Cover well and gently simmer for 1-2 hours

Blend the soup until it's smooth

Serve with bread

NOTES
What I said about blending the soup in my recipe for broccoli and Stilton soup still stands. If you aren't careful you could end up spraying the kitchen and your face with napalm-hot liquid.

I prefer this blended until it's pretty smooth, though if you want lumps in it, be less vigorous with the blender,

You could leave the chillies out if you want. The combined flavour of the butternut squash and ginger is the highlight of the dish but, if you have been a sweary follower, you will know that I think if it don't have chilli, it don't taste of shit. Well, none of the recipes should actually taste of shit. No, they taste nice. That's just me talking street for my younger readers. While this might seem a pitiable thing for a middle-aged man to do, it's still better than most of the shite that Torode and Wallace come out with on Masterchef.

Rhubarb Triangle 1: Hot and Sour Soup With Chicken and Rhubarb

I live in West Yorkshire, in the heart (actually, it's really more of an apex) of The Rhubarb Triangle, so called because they grow arguably the world's best forced rhubarb here which comes into season in February, around the time I'm writing this blog entry. We are so proud of it in these parts that weeven have an entire festival dedicated to it. You see, although we might not have much to be proud of, what we are proud of will fuck up your kidneys and kill you if you eat the wrong bit (how fucking Northern is that?). OK, so rhubarb's not got the risk of fugu, but it's still fucking great to eat: long, deep pink stems with a unique tartness.

It's a traditional British thing to have your rhubarb in sweet dishes, like rhubarb crumble for example, but if you've read much of this blog you'll know that's not my style. Where's the spice, the chilli, the fucking profanity in that? No, I decided to get some rhubarb at the Festival and do my own sweary rhubarb triangle of three recipes, starting with this hot and sour soup. It's an Asian-based dish that I'm adding a bit of northern grit to*. Stick this one up your arse, Jamie! Fusion recipes? I shit 'em!

Hot and sour is one of the common soups you get from your average local Chinese takeaway in the UK, though usually in the UK the version we get is about as authentically Chinese as the late, great Christopher Lee yellowing up to play Fu Manchu (yes, this actually happened, for five films in the 60s). It's a great dish all the same, and you can put just about anything in it. So much so, in fact, that you do wonder if, sometimes, the less ethical establishments might gather the ingredients from the sweepings of the floor round where they prepare their food. Anyway, the point is that the throw-together nature of hot and sour soup, along with the sourness that gives it its name and the touch of sweetness it has, means that it really does suit the tart flavour of rhubarb really well.

TIMING
Preparation: 10-15 minutes chopping plus1 hour to prepare the stock base
Cooking: 30 minutes

INGREDIENTS
Stock base
2 litres water
3 or 4 chicken thighs with bone in
1 thumb-sized lump of root ginger,
1 stick of celery
half an onion, quartered
4 cloves of garlic (whole)
1 tsp whole black pepper corns

Soup
1 tbsp vegetable oil 
1 carrot cut into julienne strips
3 cloves garlic, crushed
1 thumb-sized piece of ginger, finely chopped
100g mushrooms, sliced
3 or 4 spring onions, sliced
2 stalks of rhubarb, leaves removed and thinly sliced
2 red chillies, finely chopped (including seeds)
4 tbsp vinegar
5 tbsp light soy sauce
2 tbsp sesame oil
4 tbsp dry sherry
2 tsp sugar
2 tsp cornflour
2 eggs, lightly beaten

RECIPE
Put the water in a big pan and start heating it on the hob.

Meanwhile, remove the skin from the chicken thighs and throw this and the thighs they came from into the pan, along with the other stock ingredients.

Heat to a rolling boil, cover and simmer for 60 minutes.

Remove the skinless thighs and shred the meat off the bones and set it aside.

Strain the stock and return it to the big pan.

In a small pan heat the vegetable oil then add the garlic, ginger and carrot to cook for a couple of minutes before adding the mushroom and cooking gently for a further 2.

Add the sauteed ginger, carrot, garlic and mushrooms, as well as the spring onions, rhubarb and chillies to the stock and allow to mix for a couple of minutes.

Add the rest of the ingredients, apart from the cornflour and egg, to the pan and allow it to simmer gently for 15-20 minutes.

Add a little water to the cornflour in a cup and mix into a thin paste. Pour into the soup, stirring constantly.

Stir the soup so it swirls and dribble the beaten egg into the pan to make thin strands of cooked egg as it meets the boiling broth.

Serve up and enjoy. This made enough to make at least 5 hearty lunches or is a good starter for 6 people.

NOTES
*Despite being regarded as Northern as cloth caps and whippets, rhubarb actually originates in China and has been used in traditional Chinese medicine for literally thousands of year so, technically, this isn't actually a fusion recipe at all. It took the West a further couple of millenia to get to the stage of civilisation where we had developed custard in order that we could claim rhubarb as our own.

Where I mention "julienne strips" for the carrots, it's another wanky foody word for "matchstick sized pieces".

The vinegar used in this recipe would traditionally be rice vinegar if it was an authentic Chinese soup. I've never bought any rice vinegar in my life and wouldn't know what it looked or tasted like even if someone rectally assaulted me with a bottle of it. I'd usually use white wine or maybe cider vinegar instead. However, in the instance I wrote up for this blog I discovered, after buying the rest of the ingredients for the soup that I needed, that I'd ran out of wine vinegar and had to make do with some white pickling vinegar I had in the store cupboard. The soup still tasted fucking great so it's not that critical what form your acetic acid comes in. I'd probably draw the line at malt vinegar, mind and balsamic vinegar probably wouldn't work nor be worth the expense. The same thing goes for the sherry. In an authentic version it would be rice wine. As my local supermarket is in Yorkshire and not Canton, a dry sherry is (apparently, according to the cookbooks) a suitable alternative.

The word rhubarb is apparently spoken repeatedly by background actors on TV as a non-descript word to show them talking without actually saying anything, much the same way that politicians do when they're evading questions, the vacuous twats.

I couldn't do a recipe about rhubarb without mentioning the fantastic silent comedy short by Eric Sykes from 1980 called "Rhubarb Rhubarb" which I've embedded below. It's hilarious and (assuming you appreciate the ethos of this blog) you won't regret watching it, though it has got nothing to do with food.

Potato Gregg's Last Stand: Tandoori style potato curry

All good things come to an end and so do potatoes bearing vague resemblance to celebrity greengrocers, so it's time to make him useful. Well, I couldn't let him just putrefy into a mouldy, slimy mess, could I? It would do him a disservice to make something boring with him so I decided to make this great curry. It's what he would have wanted.

Really, the potato is taken for granted, especially in the UK. Chips (and I did mention the British obsession with the fucking chip previously), mash and the horrendously bland, plain boiled old potatoes were the accompaniment to much of the nutrition in my formative years. I mean chips are OK and mash is great if made right (it rarely was back then), but the plain boiled potatoes were just so fucking bland. Serving them up like that is just such a waste of a really versatile vegetable. Let me count the ways. There are crisps which come close to the very zenith of the art of potato cookery, but nobody I know makes their own crisps. You can have them baked, sauteed, roasted, or get exotic and go for something like hasselback, duchess, dauphinoise and, let's face it, you know if it's got a French name it's going to have a good 50% extra on the price in a lot of restaurants. Alternatively, incorporate your spuds in a stew or casserole for them to braise and they not only absorb the flavour of what they're cooking in, but actually enhance it.

There is a lot of bad press about potatoes as being full of carbohydrate and therefore amongst certain healthy/faddy diet circles (yes, adherents to the Paleolithic diet, I'm looking at you as I mentioned previously, you gullible twats) they rank up there with the jism of Satan himself as a food to avoid. However, it's a little known fact that potatoes, before the global transport network and advances in cultivation made pretty much every vegetable available all year round, were one of the major sources of vitamin C in gloomy Northern Europe in the winter months. Indeed, there is actually more vitamin C in a packet of salt and vinegar crisps than in a fresh apple. Well, I say there is, but I've not checked that fact so it might be bollocks.

Thing is, potatoes are just so fucking versatile and one of the best ways to use them is in curries where they can be a main ingredient in their own right.

INGREDIENTS
½ tsp ground tumeric
½ tsp onion seeds
1 tsp cumin seeds
1 tsp mustard seeds
1 tsp tandoori spice
½ tsp paprika
½ tsp salt
pinch chilli flakes
1 small onion, sliced
2 large cloves garlic, crushed
400g peeled potatoes in 2cm cubes
300ml water
100g fresh tomatoes, peeled
2 tbsp vegetable oil 



RECIPE
Heat the oil in a heavy pan and fry the spices for a minute. Throw in the onion and garlic and cook until the onion is transparent, stirring frequently.

Add the potatoes and keep stirring for 10 minutes to par-cook them and give them a nice coating of spice mix. Add the tomatoes, stir and cook for another couple of minutes before adding the water.

Bring the pan to the boil, cover and leave to cook for twenty to thirty minutes, when the potato should be tender.


This is plenty for three or four people as an accompaniment to another curry, or is substantial enough to be served on its own with rice and/or bread. Like most curries, any leftovers taste better as lunch the next day

This is yet another vegetarian/vegan dish. It's great on its own but it makes a great part of a thali along with some of my other vegie curries and accompaniments like baingan tamatar and butternut squash curry.

I made this with old potatoes in this instance, but making it with new potatoes also works really well.

Hyderbadi black pepper chicken

Spices are incredible things. Seeds, fruits, roots, even tree bark. They generally look, at best, unimpressive and at worst just plain fucking nasty. Take the star anise. It looks like a brown shuriken but adds the subtle aniseed flavour to Chinese cuisine. Cloves look like rusty nails but they also give the heady, numbing aroma to mulled wine. Worst of all is root ginger which looks like Boris Johnson but is an integral flavour as part of Indian and Chinese food. and of course in sweet recipes like ginger biscuits and cakes. Without spices food would be just so dull.

I could go off on a tangent and twat on about how some spices are important in traditional Chinese, Ayuvedic and other historic mystical system of pseudo-medicine and they can cure all sorts of shit but if you're a regular follower of this blog you'll know I don't subscribe to any of that new age bollocks. True, herbs and spices, like any natural products from animals or plants, contain all manner of substances which may have beneficial effects and there is a lot of good research underway to look into these possibilities. Sometimes the effects aren't necessarily beneficial. For example, I could mention how capsaicin, the component that makes chilli hot, is actually neurotoxic, how you can actually get high on nutmeg if you eat enough of it and if you eat too many poppy seeds you can test positive for heroin at roadside drugs tests. Indeed the "poppy seed defence" is a well known in legal circles when people have claimed that their positive drug test was due to eating a poppy seed bagel rather than being off their tits on smack.

Anyway, onto the recipe in hand. If you've read a few of these entries you'll know I really love my spices. Most of these dishes have a good measure of spice, especially chilli.This doesn't have so much as a whisper of chilli in it. It isn't actually a curry. Yes, it's Indian. Yes, it's got some spice content. Yes, it's actually hot in a spicy way, but it's not really a curry. No coriander, no cumin, no aromatic spices, no chilli. I ranted about what made a curry in one of my previous entries but this doesn't fall into that category because it's only got tumeric, ginger, garlic and black pepper. Lots and lots of black pepper.

I have to say that this dish is probably one of the tastiest things I have ever cooked. The combination of black pepper, vinegar, ginger, garlic and onion is actually quite magical.

INGREDIENTS
2 tsp ginger-garlic paste
1 tsp salt
4 tsp crushed back peppercorns
2 tbsp white wine vinegar
1 tsp ground tumeric
3 tbsp vegetable oil
500g chicken fillet, diced
1 onion, puréed
1 onion, sliced

RECIPE
Mix the garlic-ginger paste with 1 tsp of the black pepper, all of the tumeric and vinegar and 2 tsp of the oil.

Add the chicken and stir, ensuring it's well coated, before putting in the fridge to marinate for 2-3 hours.

Add the remaining oil to a pan, and the rest of the black pepper then fry for a few seconds before adding the sliced onion. Sauté this until soft then add the puréed onion and fry until it starts to gain some colour.

Add the marinated chicken along with any liquid from the marinade and gently cook the chicken through. How long this takes obviously depends in what form the chicken is. For this entry I used diced chicken breast which took 15-20 minutes, though other times I've used chicken on the bone which is in bigger pieces and so takes longer, but I'll come onto that in the notes.



Makes enough for two adults served with rice or an Indian bread, plus maybe a vegetable curry to make a more complete meal



NOTES
Garlic-ginger paste is exactly as it's described: mushed up garlic cloves and fresh ginger. I pounded it into a paste in a pestle and mortar, but you could use a small hand blender. If you don't have either you could get away with crushing the garlic and grating the ginger then mashing it up further with the back of a spoon. Two teaspoons is about 2-3 cloves of garlic and a small thumb-sized piece of root ginger. The actual amount you need isn't actually that critical, as long as there's enough to coat the chicken as part of the marinade.

The original recipe for this was from celeb chef Atul Korcher and uses a whole chicken cut into 8 pieces. That's shit-loads more chicken than I needed since I made this for two people. Also, the original cooking method is a bit of a pain in the arse with on-the-bone chicken plus originally the recipe used 100ml oil which is way too much though makes cooking larger chicken pieces easier but makes the dish greasier than a Tory MP who fell in an oil slick while lubing himself up to participate in an orgy.

Using diced chicken may lose out on flavour of bone-in chicken, but it's so much easier to make as the chicken really needs to be rubbed with the marinade if it's in big, bony lumps. This makes the preparation more messy than Mr Messy visiting a scat party (possibly attended by a ready-lubed up Tory MP) and has the effect of giving your fingers the look of someone who smokes 40 a day plus if you have a cut on your finger it hurts like hell, thanks to the vinegar.

Chicken chow mein

While I've been doing this blog I've done recipes from various parts of the world, but so far not from China, as such. And that's not going to change with this recipe, since this is yet another bastardised/Anglicised variation on an authentic regional dish. OK, it's Chinese, in that the ingredients are oriental but, like chicken tikka masala in Indian restaurants, it's basically thrown together to appease the delicate pallets of us poor, fragile westerners. There's no sharks' fin, no rotten smelling durian fruit, no bird's nest composed of dried avian spit (or other exotic ingredient regarded as a delicacy in the orient). Not that there's anything wrong with these ingredients from a culinary point of view per se. Tastes vary around the world and what one culture find a delicacy other people find repugnant. I mean, nobody east of the Danube in their right mind would even consider bringing a lump of rancid, congealed, mouldy milk (or "blue cheese" as we refer to it in Western Europe) anywhere near their mouth, never mind eat it. Or there is surströmming arguably the most disgusting "delicacy" in the world, which is a tinned form of effectively rotten fish originating in Sweden. On the other hand, and taking a broader view, the demand for sharks' fin in the east and in oriental restaurants all over the world is seriously depleting the global population of sharks. This is because sharks' fin soup is a luxury dish and a burgeoning middle class in countries like China, Singapore and Malaysia, keen to show off their wealth and status, has increased demand.

I've eaten sharks' fin soup. It tasted delicious. Not because of the fin but because of the ingredients that went to make the broth of the soup. The fin itself added fuck all to the flavour, only being present as strips of slightly chewy gristle floating in the broth.

This raises an obvious question. If it doesn't have any taste of its own, why is sharks' fin so popular? It's so highly prized because, according to traditional Chinese medicine, it's supposed to impart sexual potency. So sharks are being hunted to extinction because businessmen can't get a stiffy. That is bad enough, but there is actually no evidence that sharks' fin is in any way an effective remedy for erectile dysfunction. In fact, since sharks are apex predators, they accumulate toxic metals like mercury in their tissues which can lead to all manner of health problems including sterility and erectile dysfunction in men. Ahh, the irony. Personally, if any bloke wants to show his social status or how magnificent his tumescence is, I think he should buy a bigger car, shag his secretary then just fuck off, and leave sharks alone. Or try Viagra.

Dragging myself back on track, noodles are huge in east Asia. They are the perfect foodstuff: filling, cheap and versatile. They are popular street food, taste fantastic and really keep these countries running.You can have fried dishes like this or soups with noodles in. In fact most eastern Asian countries have their own versions of a noodle dishes: pad Thai in Thailand, mee goreng and laksa in Malaysia, Japanese udon. They are the origin of pasta, brought back from China by Marco Polo, apparently. Like shark fin, they also taste largely of fuck all. This means they need a well-flavoured sauce (or broth in soup recipes) and other ingredients to turn them into something worth eating.

This is a really easy dish to make. The most time-consuming part is preparing the ingredients. Chopping carrots into matchstick-sized pieces, slicing peppers into strips and finely chopping ginger are a collective pain in the arse, but they cook quicker and the results are worthwhile.

INGREDIENTS
150g dry egg noodles
300g chicken fillet cut into strips
2 tbsp light soy
black pepper
3 or 4 cloves garlic, crushed
1 piece ginger (about 3 cm), finely chopped
1 small bunch spring onions, cut diagonally into pointy sticks
1 small-medium carrot, cut into matchstick sized strips
1 red pepper, cut into thin strips
100g washed bean sprouts (about a handful)
200g mushrooms, sliced
2 tbsp vegetable oil (not olive, see notes!)

Sauce
2tbsp dark soy
1 tbsp sweet chilli sauce (the thick dipping kind)
3 tbsp dry sherry 
1 tbsp sesame oil
1 tsp sugar

RECIPE
Put the chicken in a bowl and pour the light soy over it and add a liberal grind of pepper.

Mix them well so they are well coated in the soy and put in the fridge to marinate for a couple of hours or so.

Boil up a large pan of water and add the noodles.

Simmer gently until they are soft, about 5 minutes (depends on their thickness). Drain them and set aside.

Make up the sauce by adding the dark soy, chilli sauce, sherry, sesame oil and sugar to a cup and mix well then set aside.

Add half the oil to a frying pan or wok and heat until it's very hot.

Stir fry the chicken until it's cooked (about 10 minutes).

Remove the meat with a slotted spoon, leaving the oil plus any juices from the cooked chicken in the pan.

Add the remaining oil and the throw in the garlic and ginger and stir fry for about a minute.

Throw in the carrot, pepper, spring onion and mushroom and stir fry for 5-10 minutes.

Add the bean sprouts and carry on stir frying for another couple of minutes.

Return the chicken to the pan and keep moving on the heat to make sure everything is warmed.

Refresh the noodles by running them under the cold tap, drain well and add them to the pan.

Try to mix up everything and once the noodles are warmed through add the sauce mixture, and the best way I've found to do this is to gently turn them over like you might do when dressing a salad.

I would add a warning that it is a bit of a ballache to make sure that the noodles are mixed with all the other ingredient.

NOTES
Use a neutral-flavoured oil for this, like sunflower or soya, but NOT olive oil which has too much flavour and is definitely not Chinese and doesn't tolerate the high heat you need to stir fry.

The chilli sauce adds a little spicy edge to the sauce as well as a bit of sweetness and stickiness. It should be the Thai sweet type as made by the likes of Blue Dragon or Encona. These aren't very hot, but if you really can't tolerate chilli, leave it out. Then again, if you do have an aversion to chilli, why are you using a cookery blog which has a significant Scoville rating in almost every recipe?

You can put lots of different vegetables in this. I've done the same recipe with combinations including mange tout, sugar snap peas, green beans, baby sweet corn, bamboo shoots, water chestnuts. They ought to be fairly crunchy, but otherwise it's up to you. You could also make it with any other meat like beef, pork or prawn. You could even omit meat altogether and make it vegetarian.

Recipes in Chinese cookery books suggest using Chinese rice wine, or sherry as an alternative. The sherry works perfectly well, but it needs to be a dry type. Something like a fino is what you need but definitely not Harvey's fucking Bristol Cream

Like rice, soy sauce is best bought from Asian supermarkets where you can get a huge bottle for the same price as you might pay for a tiny one in your usual place.

Baked sea bream with chilli, lime, ginger and spring onion with pineapple sambal


The career of Richard Curtis has covered writing Blackadder, Mr Bean and any unfunny "rom-com" starring Hugh Grant made over what seems like the last couple of hundred pissing years. He has truly covered the gamut from the the sublime to the ridiculous followed by the bag of utter shite. In addition to this, or perhaps as a result of it, a few years ago he decided he'd not made quite enough money, so was taken on by the new owners of the Oxo brand (at that time, Campbell's) to write their adverts. One of the TV ads he was supposedly involved in the writing of had the mother of the now postmodern (and post-Lynda Bellingham "classic") Oxo family telling her soon-to-be wedded daughter to crumble a chicken Oxo cube over a chicken before putting it in the oven because "it makes it taste really chickeny". Now, forgive me if I'm wrong, but doesn't something become chickeny when it tastes of chicken? I mean, a chicken can't actually taste any more "chickeny" than it already is since it is literally already as chickeny as anything can be, given the fact that it's actually made of fucking chicken. Frigging genius! Until a few years ago I would have said it was a more ridiculous premise than upper class twit, Hugh fucking Grant, being the British PM. This was before 2010, though, when David cunting Cameron managed to scrape his way into power showing truth is in fact just as fucked up as fiction.

Anyway, there is relevance to this preamble. The point is that, although "chickeny" is a good thing if it's describing how your chicken tastes, "fishy" is not necessarily a good thing to describe the taste and smell of fish. Fishiness in fish generally means it's not fresh and that you're fishmonger is taking the piss. Actually, taking the piss is quite appropriate because fishiness in fish arises through degradation of urea, the major nitrogenous component of urine in mammals, which is taste- and odourless until it's acted upon by bacteria when fish goes off.

Of course, being an island nation with our proud maritime history, we Brits love our fish. As long as the fucker is cod or haddock, comes coated in fucking batter and is served with fucking chips. In fairness, fish and chips is a wonderful dish, especially with curry sauce, mushy peas and plenty of salt, vinegar and ketchup, but then we're back to the British obsession with fucking chips (see previous blog entry on potato wedges).

The thing is, despite being surrounded by water, it seems like we can't get decent fish easily. That, and the fact that again, a lot of people say they don't like fish ("eurrgh, it's fishy!"). But, a trip to any decent sized supermarket will reveal a fish counter with some decent offerings. Just make sure they're fresh. Not wanting to sound like regular blog guest star, Rick fucking Stein, but they should have clear eyes and smell of the sea, not of "fish".

This way of cooking fish is easy and tastes great. It keeps the subtle flavour and ensures the fish stays moist. It's based on south east Asian  recipes from places like Indonesia, Malaysia and Hunan in S China. The sambal goes really well with it (riding rough-shod over my previous rant about how fruit doesn't belong in savoury dishes).


INGREDIENTS
For the fish
1 decent-sized, whole sea bream (about 300-400g was enough for two)
Splash of olive or other vegetable oil
1 bunch of spring onions, chopped
1 red chilli, finely chopped
1 piece of fresh ginger, about 2cm cubed in size, chopped into fine matchstick-sized pieces
Zest of 1 lime plus half of its juice
Black pepper
Salt

For the sambal

1/2 medium sized onion, coarsely chopped
2 cm piece of ginger, coarsely chopped
1 garlic clove, coarsely chopped
1 red chilli, finely chopped
The other half of the juice of the lime
1 tbsp fish sauce
2 tsp sugar
flesh of half a pineapple chopped into smallish chunks
1 spring onion, coarsely chopped


Makes enough for two people. Serve it with rice, especially my recipe for pineapple rice which is the next entry of this blog, which it goes with especially well.

RECIPE
For the fish
Pre-heat the oven to 180. Take a piece of foil about three times the length of the fish (enough to put the fish on and fold over to make a cavity with plenty of space for the flavours to mingle). Smear the area you're going to put the fish on with oil. Dry the fish with kitchen roll, inside and out, and place it on the oiled part. Make three deep cuts into the body of the fish.  Mix the other ingredients for the fish in a bowl and scatter them over the top and into the cavity.

Pour on the lime juice then fold over the foil and scrunch it up to seal it, leaving plenty of space for steam to surround the fish. Place it on a baking sheet and put it into the pre-heated oven for 45 minutes.



For the sambal
Put the onion, ginger and garlic into a mortar and pound it to a fine paste with the pestle.  Heat the oil in a pan and add the paste. Fry it until it's cooked and add the chilli, lime juice, sugar and fish sauce. Once it's bubbling, add the pineapple and the spring onion and allow it to warm through.

Serve the fish whole so people can get freaked out by their dinner looking at them.



NOTES
A sambal is the Indonesian equivalent of a salsa.

The fish ought to come prepared (ie be gutted and cleaned). If it isn't, you could do it yourself, but that is a bit of a pain in the arse. so ask the person behind the counter what the fuck they think they are doing for a living and get them to do it for you. Following that, feel free to walk away from the fish counter mumbling how you can't get the fucking staff these days and how they will be bally well horsewhipped when you become prime minister

I did this with sea bream, which is a fantastic fish, but sea bass would also work as would snapper or tilapia. One of the best things about a whole fish is the fun in dissecting it to get every last morsel of flesh, including around the head where some of the sweetest meat actually is. It also really grosses out some people. Fish head curry is actually a well known (and fucking delicious) dish in Singapore.
